The Café BlueProject is the Foundation’s expression in gastronomy. It is driven by a philosophy of sustainability and healthy living for people and the environment. The cafe is proof that businesses that promote the use of natural resources and which are not motivated purely by economic interests can flourish.
From the hand of our chef Javier Medvedovsky, creator of the Espiritual Chef project, our recipes are prepared with great dedication, art and good vibrations. Our culinary delights are 100% vegetarian, and we hold Ecological Restaurant Certification (CAAE) and proximity guarantee (Slow Food).
The Café BlueProject offers a selection of dishes that varies from week to week depending on which products are in season. Our traditional dishes in vegetarian cuisine are distinguished by their gourmet and artistic touches. We specialize in creations that are fresh, full of colour and bursting with exquisite and surprising flavours, inspired by the culinary philosophy and techniques of the Raw Food movement.
Most of what we serve contains no gluten, dairy products or sugar, and, best of all, the food is superbly delicious!
